Bikini Recipe

Serves 10 people

To make the Clementine Cordial (makes 750ml)

300ml recently pressed clementine juice
200ml fresh lemon juice
500g granulated sugar

To make the Cocktail (yields 850ml, serving 10)

400ml decent vodka
100ml classic gin
150ml peach schnapps
200ml clementine cordial (as made above)
Whole cranberries, to garnish
Mandarin essential oil, as a final touch

Directions

For the Syrup: Combine all the components in a pot, heat until it reaches a simmer, mixing until the sugar dissolves. Next, turn off the heat and leave to cool down completely. Pour into a clean bottle, cap it and refrigerate it in the fridge, it can be stored for around one month.

For the Cocktail Base: Combine all the liquids in a big jug, allow it to infuse for one hour, then pass it through preferably using cheesecloth, so it's completely strained.

To serve: Add 85ml of your batch mix into a stirring glass filled with ice, and stir carefully for a minute until cold. Strain into an frosted cocktail glass or a similar vessel, decorate with the cranberries adding the final touch by giving it a quick spritz of the essential oil over the top.
